dataCollection.mcp shipped in JavaScript SDK 11.9.0 (getsentry/sentry-javascript#25553), but the docs still said MCP content recording follows dataCollection.genAI.

• Data Collected: adds an "MCP Server Inputs and Outputs" section that explains what is always sent, what dataCollection.mcp controls, how unset fields fall back to genAI, and how the per-server recordInputs/recordOutputs options override both. The section only shows on server platforms, which matches where MCP Monitoring is available.
• Options: adds mcp to the dataCollection table.
• MCP Monitoring: uses dataCollection.mcp in the global example and notes the genAI fallback for older SDKs.

The v10 Data Collected page stays as it is, because the option isn't in the v10 branch.
