The s4s2 ClickHouse clusters are moving from 26.8.10.6 to 26.8.36.3 (upstream fix for CVE-2026-116366, getsentry/ops#24913). Swap the upstream build in the clickhouse-versions matrix so CI keeps testing the version production runs.
