Harden EdgeEnv producer lineage shape validation

• tighten EdgeEnv preserved Orchestrator producer lineage validation
• require device-local sources to remain present in global and per-task source mappings
• validate per-task source/stage mappings and positive producer/device-local counts before history or Lab handoff
• document the stronger EdgeEnv producer-side handoff gate
