ci: add cross-platform CI matrix#21

Extend the test and clippy jobs to run on ubuntu-latest, macos-latest, and windows-latest. On Windows, LLVM is installed via Chocolatey and only unit tests (--lib) run since integration tests use Unix-specific paths and tools. Audit, MSRV, and coverage jobs remain Linux-only.
