Wire Tauri updater plugin, release-linux signing, write-latest-json, and UI update check. Keep createUpdaterArtifacts off in tauri.conf so unsigned PR AppImage CI still works.
Version comes from package.json; bump it with Cargo.toml then tag v*. PR CI builds unsigned deb/rpm/AppImage. tauri-action ships on tags.
