What this does
Adds a Screenshots section to README.md with placeholder image links
for: chat UI, document upload, plugins panel, settings panel, and sidebar.
Also creates docs/screenshots/ directory with a contributor guide.
Why
Closes #27
Testing
Documentation change, no tests needed.
