Public legal text: Paul reads it before merge, no auto-merge.

• Impressum: name and work address (Paul's choice) replace the placeholders; heading cites § 5 DDG and § 18 MStV. Covers both apps and names all upstream Python projects (py4DSTEM, HyperSpy, eXSpy, RosettaSciIO, abTEM). Dropped the optional parts: "Verantwortlich für den Inhalt" (journalistic content only), the USt-ID line, and the liability-for-content/links boilerplate. Kept the consumer-dispute sentence and the privacy link.
• Privacy page: the Controller block gets the same name and address, the "to be completed" callout goes, "Last updated" is 5 November 2026.

Separate from #12 (Sparkle update-check wording, waits on the Sparkle builds); the two touch different lines of privacy.html except the date.

tools/check_site.py still fails only in check_releases (missing macTEM.dmg on the latest macTEM release), the known gap another thread is fixing.

"Links and releases" fails in check_releases: the latest macTEM release has no macTEM.dmg asset. Not this PR's: it only edits text in impressum.html and privacy.html, and the same check fails on main and on #12 locally. The fix is attaching the DMG to the macTEM release (the v1.2.0 DMG work in progress elsewhere); no change in this repo fixes it. This PR also waits on Paul's read of the legal text before merge.
