fix: embed the animation as a GIF instead of a <video> tag - #14

GitHub's Markdown renderer strips <video>/<source> tags for repo-hosted files (it only allows inline video playback for files uploaded through its own UI), so the previously embedded MP4 never rendered in the README. - hadcrut5_animate.py: pick the writer from --outfile's extension (PillowWriter for .gif, FFMpegWriter for .mp4 as before), so GIF export needs no extra system dependency beyond Pillow (already pulled in by Matplotlib). - README: embed the GIF via standard image Markdown instead of the <video> tag. - plots.sh: generate the .gif instead of the .mp4. - Drop the now-unused plots/HadCRUT5-1880-1920-animation.mp4 and add the .gif in its place.
