docs(genesis): add refundLaunchPoolV2 and soft cap to the JS SDK reference

Why

Companion to #562. That PR documents the Launch Pool soft cap conceptually; this one brings the JavaScript SDK reference page in line with @metaplex-foundation/genesis 0.42.0.

Two gaps on /smart-contracts/genesis/sdk/javascript:

1. refundLaunchPoolV2() was missing entirely — it is the only way to recover a deposit, both when a launch misses its minimumQuoteTokenThreshold and when it exceeds its softCap.
2. The addLaunchPoolBucketV2 signature was stale — it predated both the softCap and minimumQuoteTokenThreshold extensions.

What

• refundLaunchPoolV2() — new signature block plus its entry in the Launch Pool Operations table. Covers the permissionless crank path (only payer must sign) and the errors it returns.
• addLaunchPoolBucketV2 — adds softCap and minimumQuoteTokenThreshold to the signature, with a callout that softCap is required in 0.42.0 and must be passed as null when unused.
• LaunchPoolV2Extensions type block — all ten extensions with their value shapes, plus a note that they are set individually via addLaunchPoolBucketV2Extensions() / removeLaunchPoolBucketV2Extensions() and rejected after finalization.
• State field lists — adds refundCount, weightedQuoteTokenTotal, extensions (bucket) and weightedQuoteToken, refunded (deposit).
