Adds optional step for configuring self-hosted GitLab and updates UI screenshot

Overview
Updates the deploy/gitlab.mdx guide to include self-hosted GitLab instance configuration (host URL + public accessibility requirement) and clarifies monorepo and deploy branch selection during setup.

Cleans up introductory wording/keywords and removes the prior HTTPS-cloning prerequisite note while updating the connection step instructions and screenshots.
