Doc update

nf-core/pixelator has two main tracks: pna and mpx. I find the filenaming scheme clearer if we have `test_mpx.config` and `test_pna.config` rather than`test_mpx.config` and `test.config`. From the user's perspective it doesn't change anything since we still define a test profile.
