docs: record MAP phase zero audit

• inventory the consolidated MAP monorepo
• distinguish working capabilities from placeholders and gaps
• record the verified build, test, schema, registry, and security baseline
• define compatibility constraints for the architecture-layer MVP

Closes the audit phase of #103.
