chore: remove dead v3 DockerHub build workflow - #132

Conversation
.github/workflows/v3.yml triggered on push to feature/v3, which merged into dev (PR #131) and was deleted. The workflow is now unreachable dead weight - nothing can trigger it. The :v3 DockerHub tag it used to publish isn't referenced anywhere else in the repo (checked); docker-compose.local-test.yml mentions it only in a comment and isn't tracked by git anyway.

.github/workflows/v3.ymlbuilt and pushed the:v3DockerHub tag on every push tofeature/v3. That branch merged intodevvia #131 and was deleted — the workflow is now unreachable dead weight.Checked for other references to the
:v3tag orfeature/v3branch before removing: none in tracked files.docker-compose.local-test.ymlmentions:v3only in an explanatory comment, and isn't tracked by git anyway.
