docs: clarify Cinderbox as the CM5 path - #20

Replace the old CM5 fallback note in the Matchbox BOM with a direct reference to the dedicated Cinderbox BOM. This makes it clear that the CM5 carrier-board configuration is its own model path, not a Matchbox fallback.

The old section implied that a CM5 carrier-board configuration was a Matchbox fallback. That is no longer the right framing. Cinderbox is the dedicated CM5-based model and should be referenced directly.
