Reorganize docs sidebar: new Platform, Products, Accounts & Wallets headers

Summary

Reorganizes the docs sidebar navigation (documentation.yml) to declutter the Trading header and improve content discoverability.

New Headers Created

• Platform - operational/access pages (Bridges, Mobile Access, Maintenance, Testnet FAQs, API Best Practices, Receive Window, Vaults)
• Accounts & Wallets - wallet, deposit/withdrawal, sub-accounts (moved from Trading > Accounts)

Structural Changes

• Risk & Liquidations: 12 flat pages reorganized into 3 sub-categories (Margin, Pricing & Limits, Liquidations & Safety)
• Trading > Placing Orders renamed to Orders (non-clickable category); "Placing Orders" overview moved inside as a page
• Trading: Price Impact/Slippage, Margin Calculator, and Self Trade Prevention grouped under new Risk & Execution category
