new mac bootstrap

1. install desired mac apps like firefox, ghostty, etc
2. install git/xcode devtools - sudo xcode-select --install
3. install determinate nix
4. git clone this repo
5. copy systems/aarch64-darwin to new system matching the hostname
6. edit username as necessary
7. nix run "nixpkgs#nh" darwin switch
8. jj git init - we're set up

this is a work in progress and many things i use on a day to day may not have alternatives
