[6.0.x] Update registry reference

Purpose

This pull request updates the WSO2 Identity Server Docker Compose setup to use the new container image registry location. The changes ensure that both documentation and Dockerfiles reference the correct image source.

Container image registry migration:

• Updated the base image in docker-compose/is/dockerfiles/is/Dockerfile to use registry.wso2.com/wso2-is/is:6.0.0.0 instead of the old docker.wso2.com/wso2is:6.0.0.0 location.
• Updated documentation in docker-compose/is/README.md to instruct users to remove the registry.wso2.com/ prefix (instead of docker.wso2.com/) when using locally built images.
