Escape underscores in math and credit HKU affiliation - #5

- Escape every subscript underscore inside $...$/$$...$$ as \_ so
kramdown's GFM emphasis parser can't pair two of them into an <em>
span and split the formula (verified end-to-end against the site's
actual jekyll-spaceship + kramdown-parser-gfm pipeline: kramdown
strips the escaping backslash before MathJax ever sees the text, so
subscripts render correctly, e.g. $$\mathbb{E}\_{(s,a)...}$$ reaches
MathJax as bare E_{(s,a)...}).
- Credit the Agentic Intelligence Lab's University of Hong Kong
affiliation explicitly in the opening paragraph.
