Update FoundationModelsKit and Xcode 27 Beta 5 compatibility

Summary

• pin FoundationModelsKit 3.0.1 at exact revision 65834b11d6da41e4a2f51003eba930b211d6f031 in both Swift packages, the Xcode project, and both lockfiles
• align the Lab with the Xcode 27 Beta 5 transcript, metadata, PCC locale, and Spotlight searchable-item APIs
• preserve the Gemini video provider by moving provider-only media into executor configuration after custom transcript segments were removed
• remove the retired transcript UI/localization path and refresh the checked-in Beta 5 API notes

Follow-up

FoundationModelsKit 3.0.1 deprecates the combined Calendar and Reminders tools and makes their mutation paths fail closed. A separate Lab PR will migrate those integrations to explicit app-owned confirmation instead of weakening that boundary.
